Every Monday, my friend and I have a dinner date and cook dinner every second we at my place and the other weeks at her place.
So, we try new recipe and talk about last week and upcoming week.
We made this tasty vegetable lasagne, the recipe is collected from (
It is made by, spinach, haloumi, sunflower seeds and tomatos. The preparation and cooking time takes no time.
When I made this at home I added some spices such as chilli, ginger, garlic och sabji masala and some other things. The whole kitchen start to smell like India.

1 onion
1 clove of garlic
1 tablespoon canola oil
1 package fresh lasagne sheets 200g)
3 tablespoons tomato paste
500 g of crushed tomatoes
1 tsp runny honey
1 Vegetable stock cube
2 tablespoons chopped fresh thyme (or 1 teaspoon dried thyme, for 4 servings)
4 cups water
200g frozen spinach leaves
2 halloumi 200 g)
1 1/2 cup pumpkin seeds (preferably roasted)
1 1/2 cup grated priest cheese
salt and black pepper
any fresh thyme for garnish

Preheat the oven to 225 ° C.
Scale, share and finely chop the onion and garlic.
Fry the onion and garlic in oil soft without taking color, about 3 minutes.
Add the tomato paste, crushed tomatoes, honey, stock cube, thyme and water.
Cook over medium heat without a lid for about 5 minutes. Add the spinach and cook for another 5 minutes. Season with salt and pepper.
Cut halloumin into thin slices.
Layer the tomato sauce, lasagna, pumpkin seeds and halloumi in an ovenproof dish, about 20 x 30 cm. Begin and end with tomato sauce. Sprinkle with grated cheese.
Set in the middle of the oven for about 20 minutes. Garnish with thyme possible.
