Gignerbread cookies

So, last sunday was my day to bake gingerbread cookies. For Christimas gingerbread is a must no christmas without the cookies.

for about 100 cookies:

150g softened unsalted butter
3/4 cup light syrup
2 cups granulated sugar
1 1/2 cup minced ginger kaneln
1 1/2 ground nejilka
1 egg
1 egg yolk
2 tablespoons warm water
1 teaspoon baking soda
about 6 1/2 cups flour

simmer the butter together with the syrup, sockeret and spices. song from no cool. add the egg and ägggulan. mix the bicarbonate with water and add the flour (I needed 4 ounces). knead to a smooth dough on floured surface. let it sit overnight.
Take out the dough for about 20 minutes before baking. qualify out in batches until it is about 1 mm thin. use molds to make cakes. bake in middle of oven at 160 degrees for 10-12 minutes (I needed maximum 8 minutes) or else burned cookies.
