So I have this great Chritmas baking book which I got from my mom. However, I think next time I am making saffron buns I will try an other recipe from my grandmothers cooking book.

For 40 saffron buns

  • 150 g butter
  • 3,5 dl milk
  • 50 g yeast
  • 1,5 cream fraiche
  • 1 dl suggar
  • 1 g saffron
  • ca 15-18 dl flour
  • 0,5 teaspoon of salt

And you need 80 raisins and whipped egg
Ovens’ temprature should be 225 degrees

How to make the buns

break the yeast in a bowl. Heat up the butter add the milk to 35 degrees and pour it into the bowl with the yeast. Mix it well.
Add all the other ingredients and work the dough by hands for around 5 minutes. Let the dough rest for 45 minutes.

After 45 minutes, make 45 small balls of the dough. Roll every ball to 15 cm long and turn end ends to the middel of the dough. Pop raisins in the middel of the buns ends. Let the buns rest for an other 40 minutes. Bruch the buns with beaten eggs and in the oven for 8 minutes.
